Spring Break Tuesday

Also known as the "busy day": two appointments, one dog play-date, and one book club meeting with co-workers.

Started with Angela's Blueberry Banana Kale Smoothie (she wasn't kidding - it's fantastic!):
 Late morning snack:
 Lunch courtesy of Whole Foods: Vietnamese Tofu Noodle-Salad, with vegan rolls.
 Dinner: "taco" salad with mixed greens, red onion, avocado, corn, salsa, a few of my favorite tortilla chips

And now I'm tired! Will there be exercise tomorrow? You betcha!

  1. Wow, that mason jar is HUuuugge! Haha. Sounds delicious though. There is really so much one can do with smoothies, I love it. I love pistachios too! It's been a long time since I've had any though.
    Looks like some really good stuff today.

    1. I know, it's so silly that I use them only half full nearly every time! I'm really hoping my next house will have a garden, and I'll use the mason jars for their intended purpose of canning my own veggies / making sauce.

      Pistachios were a great treat! It was a pretty good day.

  2. That smoothie sounds amazing. I love that you use the mason jar :) I can't find mine! I'll have to fix that. That WFs lunch looks amazing! They really know how to do it right (sometimes, ha!). Your taco salad looks awesome, that's one of the things on the tons of menus I've hoarded from raw restaurants that I was planning on recreating when fresh corn is in season :) Looks like you did a great job! I need to get some salsa. mmm.

    1. I bet you would like the smoothie, even with kale in it, the taste is very sweet! Apparently it was the day of salad, between my lunch and dinner - you're absolutely right about making a fantastic taco salad with fresh corn this summer! Yum!

      Remy appreciated the exercise, and has been napping since we returned! Ha!
