Avocado Thursday

Hello! Tuesday, I intended to have you join me (for a friend's birthday) in a restaurant for dinner.  However, my fifteen year old vehicle had other plans.  Tow, repair, rental car, two days and a credit card later - here I am.  Such is life, and I'm lucky that it wasn't worse.  

Car issues continued (but were resolved) this morning, so no breakfast picture - but it was another green smoothie.

Lunch: kale, avocado, green chile, ground pepper.
 Afternoon quick trip to Whole Foods, procuring the ever elusive Gingerade (so good!) and. . .
 Melon cup
 Dinner: can't be bothered to cook, so a Chipotle Veggie Bowl happened. (Brown rice, black beans, corn salsa, red salsa, more avocado due to a generous amount of guacamole, and too little lettuce.)

Relieved to be back to normal! I'll be back tomorrow to make up for lost time. . .

  1. Yikes, car troubles are the worst!! That sucks that you had to go through that but at least things are hopefully back to normal, and you are right, it could have been worse!

    Your kale salad looks amazing as usual. I'm hoping that I'll be able to get into raw kale. I'm working up to it :)

    I love me some fruit cups and yours looks very tasty! I'm still determining how I feel about kombucha. I still have a bottle of gingerberry to try and I'll probably break into it over the weekend.

    Yay for Chipotle! The bowl looks awesome and i agree, they always put too little lettuce! It looks great though, and it probably tasted even better because you didn't have to make it! :)

    The weekend is so close, hang in there!

    1. I recall your car battery incident a while back, so I know you feel my pain! :) Even in the face of all the turmoil, I was definitely blessed to have so much help.

      I bet you'd love a kale avocado salad! It's all about massaging the greens and letting them rest long enough to become a little tender.

      Those pre-cut tubs of fruit will be the death of my wallet - need to watch out! Gingerade is absolutely favorite, and it's always out of stock. Gingerberry is decent, but's been awhile since I had it.

      I had not been to Chipotle in a while, so it was a nice break from the WF hot bar!

  2. Ack, I am so happy not to have to deal with cars. I hope things work out alright.
    Love all the avocado today, especially on the kale salad! Green chiles, eh? What kind? Did you just cut them up into it? I love a bit of spice with the creamy avo.
    Kombuchas were on sale here today so I went a little wild with that one :)

    1. It would be great to be car-less, and it is a goal once I live close enough to everything. Our public transportation isn't nearly as fabulous as NY!

      It was the same bottled green chile that I use on my tostadas - nothing special, but super easy. It's like guacamole kale!

      Yes - that's exactly why I bought them! 2 for $5! Otherwise I don't purchase them, too expensive and they are still growing on me.

  3. I once got up the nerve to ask the Chipotle girl for extra Lettuce. It wasn't worth the little bit of extra I got.

    1. Ha ha! I wasn't paying attention, otherwise I might have spoken up. It really is an integral part of the Chipotle bowl experience!
